Hello Market Friends:
Another lovely Thursday ahead, and the local selection keeps growing! We'll have music and displays as well as wonderful food for you.
Ever since she found out I work at a farmers' market, my dental hygienist wants to talk about what's in season and the best recipes we've tried. I'm sure she only understands half of what I tell her with a mouth full of tools, but her cooking sounds great. When I told her about Waymac's beautiful oyster mushrooms, she recommended sprinkling them generously with parmesan, putting them under the broiler, and then serving them on a bed of arugula or other full-flavoured greens with a splash of balsamic vinegar. Yum! Here's another delicious way to enjoy them:
Saute 4 chicken pieces from Field Sparrow or Beretta Farms in butter and oil, sprinkling with salt and pepper. When nicely browned, lift them out of the pan and set aside. Add a pound of oyster mushrooms (cut into individual 'shrooms) and saute gently until tender. Lift the mushrooms out as well. De-glaze the pan with a small glass of white wine, mix the chicken back in, and cover. (Add a little tarragon, parsley or thyme if desired.) Simmer until the chicken is cooked through, then add the mushrooms and about 1/2 cup of table cream, to taste. Stir well, check seasoning, heat through, and serve with egg noodles or boiled new potatoes.

Pine River Organic Farm reports that they will be adding beans and zucchini to their selection, and still have asparagus!
Feast of Fields will be bringing their own strawberries, black currants, gooseberries and maybe raspberries, and also selling wild blueberries and saskatoons.
Sosnickis' contribution: "Our hard work is now paying off as we begin to harvest our heirloom tomatoes! We had the first trickle last week and should have more for Dufferin! No artificial lights, no heat, grown in our own organic field soil and organic compost - and they are GOOD!! We grow our early beets in between the rows of tomatoes on non-walkways, so we'll have Beets too! More Lettuces, (especially the mini lettuces that everyone loves so much!) Swiss Chard, both kinds of Peas (sugar snap and shelling), Kale in abundance: Redbor Kale, Darkibor Kale and Black/Dino Kale!" Jessie, Ben and Sadie
Reimer Vineyards will be in the VQA Wine Tent.
Guest vendor Fressy Bessie will be visiting: "Stop by to taste all our baby food purées and our new healthy meals for children 12 months and older - lentil stew and ratatouille."
